pan & mix everything well, scraping the pan. Add the prepared lentils & additional chicken broth (I use unsalted) to desired consistency. Cook a little more & then add 1 small can of tomato sauce for additional flavor & a nice color to the dish. Add a 15 ounce can of diced potatoes. Up to this point, I used Medium heat; now, change to a Low setting for about 30-40 minutes. If the mixture gets too dry, add a little more broth. Serve in a bowl, topped w/fresh cilantro leaves.
