My carbon steel pan doesn’t work as well, probably because it’s less dense and therefore has wider temperature swings than a cast iron pan. One way I use my carbon steel with it is if I want to sear something in my instant pot insert. It doesn’t work on induction but I can get it rocket hot this way.

Damn, I didn’t even think that these are also made as cheaply as possible and in a way that makes them unrepairable. It’s a lot like electric cars: I get that they’re better but I don’t trust any company to make one that doesn’t do something shitty.

In my town they’d do 20 and then slowly coast to a stop at every light. To be fair they’re all like 80 and on who knows what medication. I’ve seen a few with oxygen tubes in their noses while behind the wheel.

“Homeward Bound” by Simon & Garfunkel. It was really hard to choose because my dad loves music and has played guitar for almost 60 years. He’s still active in the local music scene and plays a couple gigs a week even in his 70s. But I picked this song because when I was a kid he was in a folk duo that practiced in our basement. This was the last song they played at their gigs, and the last one they played at practice. I was in elementary school at the time so my bedtime was right around when they’d be wrapping up and I have a core memory of hearing my dad singing it wafting up from the basement as I drifted off to sleep

I cursed myself by mentioning it yesterday, so I’m having beef shanks braised in homemade tomato sauce with red wine, and homemade fettuccine. Just got done cutting the pasta. I should be eating in a half hour. I’ve been cooking for two and a half.
