@bryanjclark@mastodon.social TBH also in a weeknight rut over here, but many of my go-tos are from Simply Julia (highly recommend, probably available at the library?) - tofu sesame rice bowls, carrot & chickpea korma, and garlicky noodles with mushroom & brocollini are all in frequent rotation. And the green beans with garlic & tomatoes as a side for grilled brats!
