The workflow looks tremendous and like there are few options without feeding a company's servers/AI/databanks/facial-recognition-learning-systems so I will just say up front what I'd prefer:
- FOSS or other ethical tech (small EU-based businesses under GDPR ok)
- Smartphone if at all possible: .APK or SFOS preferred, iOS is doable
- If necessary, PC tools using Debian flavors of Linux (ubuntu, raspbian), or MacOS
- #noai unless running STT or caption burning models locally, on the box
