@purpleidea@mastodon.social @swick@hachyderm.io definitely not masking. if you scald the tea in the first half there’s no recovery. that tea auntie article i linked says something about “tam[ing] the tea's tannins” and “the fat globules in milk act to further slow the process down” - i think the fat slowing the process is maybe accurate, but i don’t know the chemistry. i can say for certain that if i add milk too early, the tea barely steeps/brews at all. fwiw, that article also contains the sentence “Covering the chai helps traps volatile aroma molecules in the pot and allows them to infuse back into the milk instead of just allowing them to waft off into the air.” so … uhhh … grain of salt.

@purpleidea@mastodon.social this is precisely why you can't use tea bags or tea with long leaves in it... you actually need cheaper/crappier tea leaves made from the cheaper part of the plant. this is also why tata gold is harder to pull off: it contains 15% long leaf tea, which risks getting bitter. you really don't want to drink this tea black, but you also want to take care not to throw too much tea in there and make it too bitter even for preparation with sugar and milk. it can't be at a rolling boil... more of a simmer. "medium heat" is probably too vague — the water needs to be barely moving while steeping. just hot. you'll never make chai bitter by the process of boiling *after* the milk is added, which is why the water+tea boil is limited to 5.0 minutes. the longer things (low) boil with the milk, the better the chai gets and the creamier the milk becomes... but the milk prevents bitterness. sometimes i'll let the milk simmer for 15 or 20 minutes. doesn't matter. cc @swick@hachyderm.io (in case you want more detail. ha)

@purpleidea@mastodon.social @swick@hachyderm.io yeah, everybody has their favourite masalas. i'm not a fan of lemongrass, cloves, or star anise. when p and i were stuck in kashmir for the first year of covid, our friend's family refused to have *any* masala unless it was cold outside.

@purpleidea@mastodon.social @swick@hachyderm.io warning, in case you don't watch the video: tata gold is the best, but it's fragile and finicky which is why 80% of the non-india world seems to prefer wagh bakri. you can finish your cups off with a sprinkle of kesar (saffron) but it's even more likely that you have fake kesar than it is you have fake/destroyed cinnamon, so a reliable source is good. i guess i could have said (N - 0.5) cups of milk. i'm sleepy. get the fattiest milk you can buy. if non-dairy, i prefer oat => soy => almond but you'll just have to experiment to see what you like. putting the sugar in earlier reduces its sharpness. in the video i put it in at the end... that's generally a mistake, though you can pull it off with demerara because it's got a bit of that molasses taste. if you have an induction stove with real dials, that's as good as gas (for the froth boil)... those are just uncommon. hth - let me know how yours turns out!

@purpleidea@mastodon.social @swick@hachyderm.io but my current recipe is my friend punit's milk-heavy "madhya pradesh chai": - N cups of water - boil the water - shred in ginger, high-quality cinnamon, elaichi (cardamon) pods ... NO POWDERS! only use cloves if you love the taste of soap. - as water comes to a boil, turn it down to medium - add brown sugar, demerara, or jaggery ... i prefer jaggery for chewy feel, p prefers brown sugar, we split the difference with demerara. white sugar bad... makes it sour. i put one heaping teaspoon per cup of water, but you do you - add one rounded tablespoon of chai powder per cup of water (teaspoon if you want less caffeine, taste, and joy) aside: your tea options are - 1. tata gold 2. wagh bakri (not pre-spiced!) 3. taj mahal 4. tata premium 5. red label 6. tata agni ...in that order. no bags. other options are fine as long as the tea looks like little black balls and not leaves. - medium heat 5.0 minutes - add (N * 2 - 1) / 2 cups milk - medium heat ... some minutes - "broth boil" x3 - strain

@samebchase@fantastic.earth i think wxwidgets is nice. the problem, in my case, is a mix of things: * i want it to look nice or native or both * wxwidgets still looks kind of dated, as far as i can tell * i have platform deps: libsecret (or equivalent), http, a pdf viewer, an image renderer, etc. * i would /like/ to keep this code in typescript ... partly because it's well-known and partly because i'd like to get comfortable with it that said, it does have ruby bindings. if i get tired of maintaining a wpf port of my gtk app... it's a real option, i suppose.

@amolenaar@fosstodon.org @tbernard@mastodon.social update in my mega-thread with screenshots. honestly, i didn't feel any rough edges with gtk itself. also: SO PRETTY because i'm (foolishly?) doing this thing in typescript, that seemed to be my major headache with the windows build. ultimately, i gave up on winders. linux and macos can be gtk and windows can be an ugly-as-sin blind wpf port. windows is just too foreign unless you're sticking to well-trodden paths (c, c++, python), i think.

@andrew_chou@toot.cafe typescript is definitely an odd choice, on my part. there's plenty of gtk apps that work beautifully on windows: gimp, inkscape, etc. those things are also infinitely more complex than anything i'd ever build. :) gtk with c, c++, or python will be a solid experience even on windows, i think.

i'm grateful gtk works well on mac; i'd choose qt or slint or flutter or something over maintaining 2 ports. but i agree with @nikitonsky@mastodon.online - we've lost 2/3 of native: https://tonsky.me/blog/fall-of-native/ the only platform that isn't a trainwreck is linux. qt is good. gtk is good. the devs care, and it shows.

yes, i know python + gtk plays nicely on windows. i don't know python well enough to choose it over typescript for this. however, i do know c#. at a certain point, it was less effort to build (and, hopefully, maintain) a braindead c# + wpf port.

gtk + gjs on windows took me *days* to get building. i had to build gjs from source, fiddle with msys2 packages, and generally try to grok the mismatch. this silly little app kept locking up the ui, somehow. every time i thought i had it fixed, the ui locked up somewhere else. gjs issue, i think.

this past week has been a weird experiment of seeing how far i can take a tiny xplat gtk app written in typescript.

here's how it looks. i must say, gtk on mac and windows is *damn* pretty. untweaked. kudos, gtk devs. ❤️

but ultimately, i ported to c# and wpf on windows, even though it's hideous.

@ju@chaos.social @haeckerfelix@mastodon.social i just did a sample build of my old gtk app on my mac and it already looks/feels less weird than my flutter spike ... down the rabbit hole i go. :) gtk definitely looks pretty good in foreign lands, these days. i was saying to @nirbheek@hachyderm.io that it looks/feels less foreign than 5/7 of the apps i'm currently running ... and the 2 apps that have it beat are settings and finder, which are both hideous, thanks to tahoe.

@tbernard@mastodon.social i’m not blocked, per se. but my goal here is to release a thing quickly and call it a day, more-or-less. i don’t have a lot of energy for uphill battles in side projects, at this age. ;) it’s still tempting, even if there will be rough edges … it seems there are few (if any) xplat toolkit options without rough edges anyway.

@rgm@cosocial.ca i'm a fan, but the readme still has a status of: "Work in progress. No docs, and everything changes every day." so i think i have to pass on humble, still. good call, though. i actually hadn't looked at it in ages.

@lepisma@mathstodon.xyz this is a behaviour you're welcome to engage in, since all this stuff is open source and the data model is "just files" but wow will i not ever intentionally support this. haha

ok, well isn't *this* funny timing: https://help.obsidian.md/sync/headless my (very) dumb immutable + local-first bookmarks thing currently has a headless sync daemon. i was just about to kill it off. would you want a headless daemon to sync your bookmarks (between devices) all the time for you?

ghostty (semi-random example) is mostly zig with thin(ish) native ui wrappers on top. it's stupid-but-tempting to do something similar with a rust core. (very stupid, given that i don't really know rust.) i would really like someone to talk me out of that by telling me what a great cross-platform native desktop hacking experience they had recently in... something that's not a browser.

tauri came up. for desktop apps so far, i only have linux (gtk + adwaita, typescript) and it's already gone pretty bitrotten since I've been focused on the mobile apps and browser extensions. i'm.... torn. electron works. i hate absolutely everything about it, from the bloat to the security model. but I'm typing these words into an electron app, and for good reason. i'm not sure i'm quite brave enough to knuckle down on tauri, since i've heard it's still got a way to go in terms of maturity.

ok, so 3 alpha testers have requested oauth2 *on a phone* this week... including my mom. ;) oauth2 people: is this a thing you do? you want to log into an app on your phone with the same oauth provider you use for a service? i never use oauth2 unless a website forces me, so i'm ignorant.

lofi/34 was possibly the best #lofi meetup i've attended yet. great set of speakers. brendan's talk, in particular, was an absolute firehose of information. very fun and makes me even more excited about iroh. ❤️ recording is here: https://www.youtube.com/live/e3bsA2AK0Vw thanks @Yonz@mastodon.social for putting this together!
