@keira_reckons Adapted from Mastering Bread by Vetri and McWilliams: 756g flour (I usually do about 50% WW, not traditional I know), 450g water, 17g salt, 125g active liquid starter. Makes 12 ~100g bagels. You’ll need to make a few times and adjust amount of water to suit your flour.

Potato variety review: Currently eating my way through the 2025 potato harvest. I grew ‘Blackberry’ potatoes for the first time. Great yield of roundish, medium-sized tubers. These are the purplest potatoes I’ve ever used in the kitchen. Loaded with anthocyanins. Only OK roasted, since they are somewhat waxy. Quite nice boiled (tonight I seasoned with a harissa dressing). They have a strong potato flavor, especially when roasted. Recommend! #potatoes #cooking #gardening #PlantVariety

@Pollinators I’m part of a community-based seed saving group. When we share seeds, we want them to work well here, so we try lots of things. This year was a big year for eggplants, along with pepper and okra. Epazote is doing really well, but Iranian fenugreek is not (too wet I think). Given your location, definitely check out Cultivating the Commons for seed. Probably zone 4. I have multiple varieties of pepper from them. Harvest starting soon. Big fruits, plants loaded, really nice.

@Pollinators Beauties. We’re trialing and seed saving with about 65 eggplant plants this season. Zone 5b NE WI. African eggplant is doing well for us too. The variety is Nyanya chungu, from Congo. Harvested white but will mature to orange. I got the seed from Truelove Seeds. Best variety for S. melongena is Diamond. The seed was grown at Cultivating the Commons in N WI, near the Twin Cities. We started harvests in mid July. Every plant loaded with fruit. Excited to save their seeds.

@ClimateJenny I’m now searching for “hedgelaying” rather than “hedgerow” and finding some useful stuff. Yes, I’d appreciate recs for thorny shrubs / trees. I’m thinking Crataegus macrosperma, Prunus americana...

What books or articles can you recommend on establishing a hedgerow? I’m thinking a proper one that will stop large herbivores from going through or over. Thanks!

@Anne_Delong The leaves are edible, certainly, but the plants will be focused on flowering this spring, so leaves will be small. I’d leave a few plants to make seeds. You won’t need to buy any seed for a few years, and they should be cold hardy plants.
