@diegovsky Start with researching where you want to go (Portugal, it sounds) and find out what it takes to stay there.
Considering where you're at on your education, I'd be looking for EU companies that are hiring foreigners; if you can get your foot in the door, they'll handle your Work Visa and will allow you to look into other options *while* living in Portugal.
I know, it's not that easy. It's not easy at all. But that's the most direct way. (it was part of our original plan as well, but since my wife isn't coming with me that kind of screwed up that plan)
The costs probably won't be as bad as you think they'll be, especially depending on how much stuff you'll want to take with you. Of course, I don't know what resources you have, so it might take you some time to save up the money to do it. While you work toward that, I'd suggest research research research.
There are a lot of Visas available to foreigners in the EU. Digital Nomad if you make money from Insta or YouTube. A working Visa (as mentioned above). Or, if you start your own business, you could do that business in Europe (this was a bigger headache than I wanted to deal with, but if you build websites, development work, or even remote tech support all you have to be able to prove is that it's getting you an income).

I remind myself that my situation isn't abnormal. People divorce. People have health issues. People change countries. People learn languages. Maybe the specific mix of bullshit is unique, but I'm not doing anything that other people haven't done (under harder circumstances). It helps. A bit. Also, I've been very very lucky.

The less stuff you have, the easier it will be to travel. Probably 70% of my headache has been getting my shit organized and moved (including two dogs, of which I'm struggling with the first right now).
Travel paperwork is not generally "cheap", but it's not unachievable either (at least in the US) - I think it cost me around $200 total, but I was still working then so it didn't hurt so much.
All of this did take money, but it didn't require as much as I've spent on it. I have tried to be frugal, but I was also raised to be a capitalist and I couldn't justify getting rid of everything and having to buy everything new again.

About ten years ago my health started failing. My wife and I had virtually no savings and were in debt up to our eyeballs. Since my health was continuing to decline, I knew I could not keep up a breakneck pace just to be left with starving to death in my old age.
At the time, I was commuting weekly 150 miles from my house and we spent a few years buying a small piece of property with a nearly collapsed trailer on it so that I was not doing that drive every day.
Eventually, I lost that job (health) and we sold the property. That became "savings".
My wife and I started researching places that we might be able to move if we sold our (not yet paid for) house in Portland, Oregon.
France was one of the more affordable countries with services, and it was a nice benefit that they have laws against working yourself to death. My wife is of French descent and it seemed like a good pick, so we picked it.
My wife was still working; we bought a house in France (for much much less than a house in the US would have cost) using the money from my work-property.
Then, we had a big falling out. We agreed to divorce. I asked for the French house and let her keep the house in the US (still not paid for, but worth a whole lot more money).
I drew out what little retirement I had available (something like $10k, so not nothing, but definitely not enough to retire on) and used that to send most of my stuff to France, as well as get me there for a couple of trips.
During all of this, I had a heart attack, which should have lead to Social Security benefits. They denied me, I appealed. The lawyers took a huge chunk and my wife took a chunk but that left me with enough money to stretch out for maybe two or three years, if I'm frugal.
I also do odd jobs for people around town in exchange for meals and stuff like that.
This winter I will be applying for University, which will drain the last of my bank account. With a Student Visa (which I hope to obtain), I will be allowed to work part time, which should give me just enough money to eat and pay my electric bill (the French house is paid for, so the only 'big' hit is taxes).
Once I've finished my degree, I should be allowed to work full time as well as apply for some version of French citizenship.
All of that to say this: Every step of the way has been a terrifying process of hoping like hell that nothing goes wrong, because I have virtually no wiggle room.
The only thing that I've been holding back, and I will probably have to draw it out this winter, is a handful of Amazon stocks that I got from when I worked there. That "should" bridge the gaps in covering for school, keeping transportation, and *maybe* getting around to building up some sort of safety net.
Right now? I do not have one of those. If the US pisses off France and I'm prevented from going? I'm fucked. If I have another major medical issue? Fucked. Fail out of school? Fucked. Car accident? Fucked. Etc.
I have literally been playing things one day at a time because I basically don't have any guarantee of enough for two days away.
Oh, also, my family has been extremely generous and have helped when they can. They have purchased some cheap furniture for me (and I was gifted some from my neighbors in France) and have occasionally been able to help with things like flights. But they are fixed income and aren't exactly swimming in cash either.

@EllenInEdmonton Oh yes, I've been learning French for a number of years now. I can carry on basic conversations and I can understand a lot of spoken conversations. Reading is better...writing is a little worse (all those fiddly accents).
But I'm getting there. And there are free classes offered basically everywhere in the country, so it should improve pretty quickly now that I'll be able to spend more time there.

So like, I don't want to be one of those "a lot of people say" kind of people because...well, nobody believes it. So I'm not going to do that (much).
A number of years ago I was (still am) friends with a guy that I went to college with. He had a really interesting background; had been to Europe a few times, was working on his Masters (ultimately). Had been a radio DJ and written a play, professionally performed. Joined the Peace Corps. I mean, he really did just about everything that an ambitious person might have thought, "That would be fun to do!"
And he traveled. He traveled a lot.
And one day when we were talking on the phone, I mentioned to him how much I envied his willingness to just pack up his shit and move to a country where he doesn't know the language. I was really in awe of his ability to do that, what with me being barely able to feel comfortable outside of the house.
And he laughed, and he said, "Dude, don't envy me." He goes, "every single time I'm in the airport I'm a coin toss away from not going. Every time." Then he told me, "I'm scared every time, but you know, I've been scared of everything that I've found was worth doing. Be scared. Just don't let it stop you."
And ultimately, HE is why I've been able to pack up every last little stitch of a possession and move to the other side of the world.
A lot of people DO tell me that they think that I'm brave or whatever, but to those people I just have to repeat my friends sentiments: Of course I'm scared. I would be a fool to not be scared. So what?

There is a TON of software out there that can do this stuff, but it tends to be pricey or have a monthly fee, which are both dealbreakers for me.

I need a way to keep track of many moving parts on many different projects, bonus if you can add pictures...which sounds like what you're after too. I create a blank email to nobody, which automatically saves a draft on my network server; then I can go into my "Drafts" folder wherever I happen to log in (phone, computer, wherever) and get to my notes.
But
I don't do this for big, long term projects usually. It works really well for home improvement projects (shit, that light bulb is out, that hinge is broken, etc) and especially for groceries, because I can note it the instant I know that I'm low on something and not have to leave the room.
For bigger projects I've been unable to find a consistent way to share between devices. I use ZimWiki on Linux and it works fantastically, but even though the files are all plaintext (ish), consistently sharing between devices is quite a pain (unless it's on a network share somewhere, in which case it's either open to the public or only available while you're at home).
This is a problem that I've chased a few times now, but honestly the "best" solution for me always seems to come back to a pocket notebook, a pen, and a lot of squinting while I try to remember what I scribbled and why.
For big projects that I do at home (yard stuff or building bookshelves or whatever) I just use a plain old legal pad to keep track of measurements and stuff. That's what I used to pack up my life when I moved all of my shit to France.
